It can feel scary and frustrating to care for yourself or loved ones who can't eat wheat or gluten-contaminated foods. After several close friends were diagnosed with Celiac's disease or wheat allergies, I started sifting through my recipes to see what I could make them to eat. I was amazed to realize I have quite the collection of foods that were safe for their dietary needs. Other recipes just needed a bit of tweaking in order to fit their gluten-free diet.
