We all have stretches of heavier eating, holidays, vacations, wintertime, etc. This is perfectly normal and healthy! However, sometimes it can feel good to lighten up our meals and our bodies after a period of heavier eating, to restore balance and energize the mind and body.
This meal plan reflects the way that I eat when I want to lighten up a bit, and is thoughtfully curated to expand your meal repertoire without overwhelming you with too many new recipes each day.
These meals are delicious and satisfying, while being on the lighter side calorically. These 4 weeks of recipes will also teach you some basic, useful cooking skills and support the development of healthy food prep habits along the way.
Most of the meals in this plan are plant-based, with easy swaps for dairy and meat if you prefer. A few of the breakfast recipes contain eggs. For vegans, feel free to swap them for other breakfasts of your choice elsewhere in the meal plan.
