Winter is the season of rest, hibernation and coziness. Creamy porridges, heavy foods, soups, grains, proteins and fats are great building materials. While winter isn’t really a season to grow food, we rely on a lot of stored preserved foods such as root vegetables, tubers, and greens for immune support.
Foods that are typically welcomed in winter are potatoes, sweet potatoes, turnips, beets, onions, squash, and other veggies that store well. Grains and nuts (preferably soaked for better digestion) are also great stored, as are beans and legumes. Many greens grow well in colder climates like fall or temperate winter, if well protected. For this reason, spinach, kale, collards, and other brassicas are able to be a welcome winter food.
Additionally, preserved fall foods (pickles, sauerkraut, kimchi, etc.) is also a great addition to our winter plates.
