Spring cuts through the heaviness of winter foods and encourages our bodies to do a little internal spring cleaning. We become a bit more active and awake. Ayurveda mentions that spring is a time to release mucus and moisture (spring is often very wet). Light and dry foods are welcomed here. If you ask a farmer what grows best in the spring, they’ll mention herbs and greens, so eat these often. Lettuces are abundant in spring, too. All greens are full of chlorophyll and offer great nutrition. Parsley, cilantro, dandelion greens, and watercress help add more fiber in the diet while moving things along in the digestive system. We rely less on grains this time of year as they can be a bit heavy. Sprouts are paramount this season, as you can see from everything sprouting up from the earth. Sprouting nuts, seeds, beans, lentils, and micro sprouts (broccoli, alfalfa, clover) are all great additions this time of year.
